We love having Mexican food at least once a week if not more. One of our favorites that is actually very simple is a healthy chicken taco bar. I marinate the chicken in a delicious chili lime marinade and then grill the chicken along with peppers and onions. Or you can throw the seasonings in the slow cooker with the chicken and until it falls apart. Then, we set out a ton of toppings so everyone can make their own. It makes for a delicious meal that our whole family loves.
